 Olive oil is the reason Olmais exists. Every year we start harvest by sample picking olives from several parts over the olive grove, tasting them and deciding where and when harvest starts.

 Using the least intrusive harvesting methods, our olives reach the mill six to eight hours after harvest where our olive oil is cold pressed and stored in small batches before we make the finals blends, all using the local Cobrancosa variety  as a base.

​

 Winer of over 40 awards, our Olmais Organic Extra Virgin Olive Oil has a robust green profile full of herbaceous aromas, a bitter entry and a prolonged pugency that denounces the extremely high content of polyphenols, this is a gastronomic example of what a premium olive oil shoulde be.

 The much awaited Tresval Organic Extra Virgin Olive Oil is a lighter blend that although still retaining all the amazing green profile characteristics is less intense making it perfect for cooking amazing dishes.

Olmais Organic Pomegranate Vinegar

Olmais "Rich & Smooth" Organic Pomegranate Vinegar

  Our vinegars are produced following an age old process where natural organic fruit juice is transformed through two fermentations. The acidity is obtained by fermenting the organic pomegranate juice, followed by a natural acetic fermentation. This process is natural and provides a complex and delicious taste to our pomegranate vinegar and it's also very good for the body.

  Know for it's anti-oxidant proprieties, cleansing agents and digestive aids, organic pomegranate vinegars are unpasteurised and contain the mother of vinegar.

   Olmais Organic Pomegranate Vinegar is perfect for dressings and cooking or to drink diluted with a glass of water.

  Olmais "Rich & Smooth" Organic Pomegranate Vinegar has a sweet and sour taste much like a balsamic vinegar but less intense and it's perfect for sauces.

  Our local apples are first pressed and their juice naturally turns into cider and then a second fermentation occurs transforming the cider into vinegar. This natural process provides a complex and delicious taste to our apple cider vinegar making it and amazing helper in the kitchen and in keeping your body healthy.

Olmais Aged White Wine Vinegar

   We usually say that fate itself willed this vinegar into existence, and this is why:

​

  A few years ago we replanted vineyards in our family ancestral lands located in the Minho region of Portugal, all of them of the local Loureiro variety, we then certified them as organic and Vinho Verde vineyards and started what we thought was going to be wine.

​

  During our very first wine making process we aerated the must so much and for so long we ended up creating vinegar, confronted with this result we decided take the next step and started ageing it in oak barrels.

​

   And this is the full disclosure story of how we create our very own Olmais White Wine Aged vinegar perfect to magnify any chutney.
